Smoked Queso Dip

  • 1-8 oz. Velveeta Cheese
  • 1-8 oz. Fieldgate Habanero Cheese
  • ½ cup chopped onion
  • 2-8 oz. cans of Rotel
  • 1-8 oz. can diced tomatoes
  • 1 pd. Italian sausage
  • 1-10 oz. can of evaporated milk
  • Seasoning: Chipotle, Cayenne


  1. Cook up Italian sausage in a separate pan. Add chopped onion to Italian sausage when almost done for 5 minutes.
  2. Mix the remaining ingredients. Add 1-2 tablespoons of chipotle and cayenne.
  3. Place on pellet grill for 40-45 minutes at 350 degrees.
  4. Stir halfway through. If it is a little too thick for your preference, add some more milk till desired consistency.
  5. Enjoy once melted.
