Old Fashioned Coconut Cream Pie
Ingredients
- 1 pre-baked pie crust
- 1 cup shredded sweetened coconut.
- 1 ½ cups half and half.
- 1 cup sugar
- ½ cup cornstarch
- 5 egg yolks
- 3.5 oz. of cream cheese
- 1 tsp. vanilla extract
- 1 tsp. coconut extract
- 1 can of coconut milk
- A pinch of salt
Instructions
- Combine milk, 1 cup half and half, sugar, and salt in a medium saucepan. Place on medium heat, stirring occasionally.
- In a medium bowl, beat egg yolks with warm milk, whisking constantly. Whisk together ½ cup half and half and cornstarch in a small bowl until blended.
- Mix egg yolk mixture with cornstarch mixture into a saucepan. Cook for 3 minutes. Add cream cheese, coconut extract, and vanilla extract.
- Pour the batter into the baked pie crust and chill for 2 hours.
