Old Fashioned Coconut Cream Pie

  • 1 pre-baked pie crust
  • 1 c. shredded sweetened coconut.
  • 1 ½ cups half and half.
  • 1 c. sugar
  • ½ c. cornstarch
  • 5 egg yolks
  • 3.5 oz. of cream cheese
  • 1 tsp vanilla extract
  • 1 tsp. coconut extract
  • 1 can of coconut milk
  • A pinch of salt


  1. Combine milk, 1c. half and half, sugar, and salt in a medium saucepan. Place on medium heat, stirring occasionally. In a medium bowl, beat egg yolks with warm milk, whisking constantly. Whisk together ½ c. half and half and cornstarch in a small bowl until blended.
  2. Mix egg yolk mixture with cornstarch mixture into a saucepan. Cook for 3 minutes. Add cream cheese, coconut extract, and vanilla extract.
  3. Pour the batter into the baked pie crust and chill for 2 hours.
